Zucchini Chocolate Cake
Ingredients
- 2 1/2 cups flour
- 1/2 cup cocoa
- 1 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 3/4 cup oil
- 1 cup brown sugar
- 1 cup white sugar
- 2 tsp vanilla
- 2 cups grated zucchini (peeled or unpeeled take out seeds)
- 1/2 cup milk
- 3 eggs
- 1 cup chopped nuts optional
- 3 tsp orange peel optional – I don’t use
Instructions
- Blend dry ingredients.
- Grease Bundt cake pan.
- Beat oil, sugar and eggs.
- Add vanilla and zucchini.
- Add dry ingredients alternately with milk.
- Bake at 350ºF for one hour.
